Cooking Instructions

  1. 1

    Prepare the Ingredients

Clean the Cedar Key clams under cold water, scrubbing the shells to remove any grit. Chop the andouille sausage, bell pepper, and slice the green onions.

  2. 2

    Cook the Sausage

In a large pot or Dutch oven, melt the butter over medium heat. Add the andouille sausage and cook until browned, about 5-7 minutes.

  3. 3

    Sauté the Vegetables

Add the diced bell pepper, minced garlic, and corn kernels to the pot. Sauté for about 3-4 minutes until the vegetables start to soften.

  4. 4

    Add the Clams and Broth

Pour in the chicken broth and add the cleaned clams. Season with cayenne pepper, salt, and black pepper. Stir to combine.

  5. 5

    Cook the Clams

Cover the pot and increase the heat to medium-high. Cook for about 5-10 minutes, or until the clams have opened. Discard any clams that do not open.

  6. 6

    Finish and Serve

Stir in the sliced green onions and remove from heat. Serve the clams warm with crusty French bread on the side for dipping.
