Prepare the Sourdough Crostini
Preheat the oven to 180°C (350°F). Brush the sourdough slices with olive oil on both sides and place them on a baking sheet. Bake for about 10-12 minutes or until golden and crispy. Allow to cool.

Prepare the Red Snapper
Thinly slice the red snapper fillet and arrange the slices on a serving plate.

Assemble the Caesar Crudo
Drizzle the Caesar dressing over the sliced red snapper. Top with boquerones and shaved Parmesan cheese. Squeeze fresh lemon juice over the top and season with black pepper to taste.

Serve the Caesar Crudo immediately with the crispy sourdough crostini on the side for dipping.
