Cooking Instructions

  1. 1

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions, usually until they float to the surface. Drain and set aside.

  2. 2

    Prepare the Tomato and Peas

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the cherry tomatoes and peas. Sauté for about 5 minutes until the tomatoes start to burst and the peas are tender. Season with salt and black pepper. Remove from heat and stir in the fresh basil. Set aside.

  3. 3

    Sear the Scallops

In the same skillet, add the remaining olive oil and butter over medium-high heat. Once hot, add the scallops in a single layer, making sure not to overcrowd the pan. Sear for 2-3 minutes on each side until golden brown and cooked through. Season with salt and black pepper.

  4. 4

    Combine and Serve

Add the cooked gnocchi to the skillet with the tomato and peas mixture. Toss gently to combine. Serve the gnocchi mixture on plates and top with the seared scallops. Garnish with additional fresh basil if desired.
