Method

Preparation and Assembly

  1. 1

    Prepare the Dough

In a small bowl, dissolve yeast in warm water and let it sit for about 5 minutes until frothy. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil, and knead until the dough is smooth. Cover and let it rise in a warm place for about 1 hour.

  2. 2

    Caramelize the Onions

In a skillet over medium heat, add a bit of olive oil and the sliced onion. Cook slowly, stirring occasionally, for about 15-20 minutes until the onions are caramelized and golden brown.

  3. 3

    Preheat the Oven

Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat up.

  4. 4

    Roll Out the Dough

Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer the rolled dough onto parchment paper.

  5. 5

    Assemble the Pizza

Spread fig spread evenly over the dough. Top with caramelized onions, sliced mushrooms, and crumbled goat cheese.

  6. 6

    Bake the Pizza

Carefully transfer the pizza (with the parchment) onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes until the crust is golden and the cheese is melted.

  7. 7

    Finish and Serve

Remove the pizza from the oven, top with fresh arugula and drizzle with balsamic glaze. Slice and serve hot.
