1. Prepare the Filling

In a mixing bowl, combine the diced duck, lobster, tomato, scallions, and cheddar cheese. Season with salt and pepper to taste.

2. Assemble the Quesadillas

Heat a large skillet over medium heat and add 1 tablespoon of olive oil. Place one tortilla in the skillet and layer half of the filling mixture on one half of the tortilla. Drizzle with red mole sauce, then fold the tortilla over. Cook until golden brown, about 3-4 minutes per side. Repeat with the remaining tortillas and filling.

3. Serve

Cut each quesadilla into wedges and serve hot with additional red mole sauce on the side.
