Preheat Oven
Preheat your oven to 350°F (175°C).

Prepare Bread Mixture
In a large mixing bowl, combine the cubed bread and diced peaches.

Mix Wet Ingredients
In another bowl, whisk together the milk, heavy cream, eggs, granulated sugar, brown sugar, vanilla extract, cinnamon, and salt until well combined.

Combine Mixtures
Pour the wet mixture over the bread and peach mixture. Gently fold to combine, ensuring the bread is fully soaked.

Transfer the mixture to a greased baking dish and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

Make Caramel
In a saucepan over medium heat, combine the granulated sugar and water. Stir until the sugar dissolves, then stop stirring and let it boil until it turns a deep amber color.

Add Cream and Bourbon
Remove from heat and carefully stir in the heavy cream and bourbon. Be cautious as it may bubble. Add a pinch of salt and stir until smooth.
