Method

For the Bourbon BBQ Shrimp

    Prepare the Shrimp

    In a large bowl, combine the shrimp, garlic, paprika, cayenne pepper, salt, and black pepper. Add the bourbon and BBQ sauce, and let marinate for at least 30 minutes.

    Cook the Shrimp

    In a large skillet over medium heat, add the olive oil. Once hot, add the marinated shrimp and cook for about 2-3 minutes per side, or until shrimp are cooked through and have a nice glaze from the sauce.

For the Cheese Grits

    Cook the Grits

    In a saucepan, bring water to a boil. Gradually whisk in the grits and reduce heat to low. Cook for about 20-25 minutes, stirring occasionally, until thickened.

    Finish the Grits

    Stir in the heavy cream, butter, and cheddar cheese. Season with salt to taste and keep warm.

For the Sunchoke Crisps

    Prepare the Crisps

    Preheat the oven to 400°F (200°C). Toss the sunchoke slices with olive oil and salt. Spread them out on a baking sheet and bake for about 20-25 minutes or until golden and crispy.

Assembly

    Plate the Dish

    On a serving plate, place a generous scoop of cheese grits, top with bourbon BBQ shrimp, and garnish with sunchoke crisps.
