Prepare the Beef
Wrap the beef tenderloin tightly in plastic wrap and freeze for about 1-2 hours until firm. This will make it easier to slice thinly.

Slice the Beef
Once the beef is firm, remove it from the freezer and unwrap. Using a sharp knife, slice the beef as thinly as possible. Arrange the slices on a large serving platter.

Prepare the Toppings
Thinly slice the red onion and set aside. Rinse the capers in cold water to remove excess salt. Shave the asiago cheese using a vegetable peeler.

Drizzle extra virgin olive oil over the carpaccio. Season with salt and black pepper to taste.
