Marinating Chicken

In a large bowl, combine buttermilk, hot sauce, salt, and black pepper. Whisk until well mixed.

Add the chicken pieces to the buttermilk mixture, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
Preparing Dredging Mixture

Mix the Dry Ingredients
In a separate bowl, combine the all-purpose flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix until thoroughly combined.
Frying Chicken

Heat the Oil
In a large, heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Dredge the Chicken
Remove the chicken from the marinade, allowing excess liquid to drip off. Dredge each piece in the flour mixture, pressing gently to ensure an even coating.

Fry the Chicken
Carefully place the dredged chicken pieces in the hot oil, a few pieces at a time to avoid overcrowding. Fry for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Once cooked, remove the chicken from the oil and drain on a wire rack set over a baking sheet or paper towels.
