Method
Prepare the Catfish

Marinate the Catfish
In a bowl, pour the buttermilk over the catfish fillets. Cover and refrigerate for at least 30 minutes.

Prepare the Coating
In a shallow dish, mix together the cornmeal, all-purpose flour, cajun seasoning, salt, and black pepper.

Heat the Oil
In a large skillet or frying pan, heat the vegetable oil over medium-high heat until it shimmers.

Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until well coated.

Fry the Catfish
Carefully place the coated catfish fillets in the hot oil. Fry for 3-4 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.
Make the Remoulade

Combine Ingredients
In a mixing bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, hot sauce, minced garlic, paprika, salt, and black pepper until smooth.

Taste and Adjust
Taste the remoulade and adjust seasoning with additional salt and pepper if desired. Refrigerate until ready to serve.
Assemble the Sandwich

Prepare the Rolls
Slice the hoagie rolls lengthwise but not all the way through, creating a pocket for the filling.

Layer the Ingredients
Spread a generous amount of remoulade on the inside of each roll. Place shredded lettuce, sliced tomatoes, and fried catfish fillets inside the rolls.

Serve
