Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add the stone-ground grits and stir well. Reduce heat to low and cover. Cook for 20-25 minutes, stirring occasionally until the grits are thickened.

    Add Milk and Season

    Once the grits are thickened, stir in 1 cup of milk, 2 tablespoons of butter, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix until well combined and creamy. Keep warm.

Shrimp and Sauce Preparation

    Sauté the Shrimp

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the peeled and deveined shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

    Prepare the Sauce

    In the same skillet, add 2 minced garlic cloves and sauté for 30 seconds until fragrant. Then, add 1 cup of canned diced tomatoes, 1 tablespoon of Cajun seasoning, and 1 teaspoon of red pepper flakes. Stir and let simmer for 5 minutes.

    Finish the Dish

    Return the shrimp to the skillet and add 1 tablespoon of lemon juice. Stir to combine and heat through for an additional 2-3 minutes. Remove from heat and stir in 2 tablespoons of chopped fresh parsley.

Serving

    Plate the Dish

    Spoon a generous portion of the creamy grits onto each plate and top with the spicy shrimp and tomato sauce. Garnish with additional parsley if desired.
