Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of stone-ground grits and 1 tsp of salt. Stir well.

    Simmer

    Reduce the heat to low and cover the saucepan. Cook the grits for about 20-25 minutes, stirring occasionally, until thickened.

    Finish Grits

    Once the grits are cooked, stir in 2 tbs of butter and 1 cup of cheddar cheese until melted and creamy.

Shrimp Preparation

    Season the Shrimp

    In a bowl, combine the peeled and deveined shrimp with 1 tbs of olive oil, minced garlic, paprika, cayenne pepper, lemon juice, and salt and pepper to taste. Mix well and set aside for 10 minutes.

    Cook the Shrimp

    In a large skillet, heat 1 tbs of olive oil over medium-high heat. Add the seasoned shrimp and cook for about 3-5 minutes, stirring frequently, until they turn pink and opaque.

    Add Green Onions

    Stir in 1 cup of chopped green onions and cook for an additional 1-2 minutes until the onions are tender.

Assembly

    Serve the Dish

    Spoon the creamy grits onto plates and top with the sautéed shrimp mixture. Garnish with chopped parsley.
