Preparation of Pork Belly

Prepare the Pork Belly
Preheat the oven to 150°C (300°F). Cut the pork belly into bite-sized cubes and place them in a large bowl.

Season the Pork
Add salt, black pepper, garlic powder, and onion powder to the pork belly cubes. Toss to coat evenly.

Bake the Pork
Spread the seasoned pork belly cubes on a baking sheet lined with parchment paper. Bake for 2 hours, turning halfway through, until the pork is tender and the fat is rendered.
Honey Sriracha Sauce Preparation

Make the Sauce
In a medium saucepan, combine honey, sriracha sauce, soy sauce, rice vinegar, and sesame oil. Bring to a simmer over medium heat, stirring occasionally.

Thicken the Sauce
Let the sauce simmer for about 5-7 minutes, until it thickens slightly. Remove from heat.
Combining and Garnishing

Combine Pork and Sauce
Once the pork belly is done baking, remove it from the oven and drizzle the honey sriracha sauce over the cubes. Toss gently to coat.

Transfer the pork belly bites to a serving platter. If desired, sprinkle with sesame seeds and chopped green onions before serving.
