Method
Crust Preparation
- 1
Make the Pie Crust
In a large bowl, combine the all-purpose flour, granulated sugar, and salt. Add the diced, chilled butter and blend using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- 2
Add Ice Water
Gradually mix in the ice water, one tablespoon at a time, until the dough comes together. Do not overmix.
- 3
Form the Dough
Shape the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour.
- 4
Filling Preparation
- 5
Prepare the Filling
In a large mixing bowl, combine the granulated sugar, brown sugar, corn syrup, melted butter, beaten eggs, vanilla extract, and salt. Whisk until the mixture is smooth and well combined.
- 6
Add Pecans
Fold in the chopped pecans until they are evenly distributed throughout the filling.
- 7
Pour Filling into Crust
Preheat your oven to 350°F (175°C). Pour the pecan filling into the prepared pie crust, spreading it evenly.
Baking
- 8
Bake the Pie
Place the pie in the preheated oven and bake for 60 to 70 minutes, or until the filling is set and the crust is golden brown. The filling should be slightly jiggly but not liquid.
- 9
Cool and Serve
Once baked, remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing. Serve warm, optionally topped with whipped cream or vanilla ice cream.
