Prepare the Ribeye
Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before grilling. This allows for even cooking.

Make the House Seasoning
In a small bowl, combine the kosher salt, black pepper, garlic powder, onion powder, and smoked paprika. Mix well.

Season the Steaks
Rub the ribeye steaks with olive oil (if using) and generously sprinkle the house seasoning on both sides of the steaks, pressing it into the meat.

Flip the Steaks
Using tongs, flip the steaks carefully and cook for another 5-7 minutes for medium-rare, or longer for desired doneness.

Let the Steaks Rest
Once cooked to your liking, remove the steaks from the grill and let them rest for about 5 minutes. This helps the juices redistribute.
