    Rinse the catfish fillets under cold water and pat them dry with paper towels. Cut the fillets into bite-sized pieces.

    Prepare the Breading

    In a shallow bowl, mix together the cornmeal, flour, cayenne pepper, salt, and black pepper.

    Dredge the Catfish

    Dip each piece of catfish into the buttermilk, allowing any excess to drip off, then coat it in the cornmeal mixture, pressing lightly to adhere.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

    Fry the Catfish Bites

    Working in batches, carefully add the coated catfish pieces to the hot oil. Fry for 3-4 minutes or until golden brown and cooked through, turning occasionally to ensure even cooking.
