Prepare the Catfish
Pat the catfish fillets dry with paper towels. This helps the seasoning adhere better.

Season the Catfish
Rub the blackening seasoning generously on both sides of each fillet.

Cook the Meat
In a large skillet, brown the ground beef or sausage over medium heat. Drain excess fat.

Add Rice and Broth
Stir in the long-grain white rice, chicken broth, cayenne pepper, black pepper, and salt. Bring to a boil.

Simmer
Reduce heat to low, cover, and simmer for about 20-25 minutes, until the rice is cooked and the liquid is absorbed.

Remove from heat and stir in chopped green onions before serving.

Add Collard Greens
Stir in the chopped collard greens and sauté for a few minutes until they start to wilt.

Pour in the chicken broth, apple cider vinegar, and red pepper flakes. Bring to a boil.

Cover and reduce heat to low, simmering for about 30 minutes, until the greens are tender.
