Method
Sandwich

Prepare bread
Spread softened butter evenly on one side of each slice of rye bread. The buttered sides will be the exterior for grilling.

Assemble sandwich
Place one slice of bread butter-side-down on a work surface. Spread 1 tablespoon thousand island dressing on the unbuttered side. Layer 2 ounces of thinly sliced corned beef evenly, then 1 slice Swiss cheese, then the drained sauerkraut (press gently to remove excess moisture). Spread remaining 1 tablespoon thousand island dressing on the unbuttered side of the other bread slice and place it dressing-side-down on top to form the sandwich (butter side out).

Grill sandwich
Heat a heavy skillet or griddle over medium heat (about 350°F/175°C). Place the sandwich in the skillet and cook 3–4 minutes until the bottom is golden brown. Press gently with a spatula or a sandwich press, then flip and cook another 3–4 minutes until the second side is golden and the cheese is fully melted. If the exterior is browning too quickly before the cheese melts, lower heat to medium-low and cover the pan for 1–2 minutes to help the cheese melt through.

Rest and cut
Remove the sandwich to a cutting board and let rest 1 minute. Cut the sandwich in half diagonally and transfer to the plate.

French fries: If using frozen fries, cook according to package directions (bake or fry) to reach crisp golden exterior — typically 12–20 minutes in a 425°F oven or 3–4 minutes in a deep fryer. If using fresh fries, cut potatoes to desired size, soak briefly, dry thoroughly, toss with a little oil and salt, and roast at 425°F 25–30 minutes turning once until crisp. Portion about 1 cup per serving.

Pickle and slaw: Place one pickle spear on the plate and serve 1/2 cup prepared coleslaw alongside the sandwich and fries.
Optional - Homefries substitution

Homefries: If substituting homefries for fries at no charge, heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add diced potatoes (about 1 cup), season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. Cook, stirring occasionally, 12–15 minutes until potatoes are golden and tender. Reduce heat if browning too quickly. Serve hot alongside sandwich with pickle and slaw.
