    Prepare potatoes (if using fresh)

    If using fresh russets: scrub and cut potatoes into 1/4- to 1/2-inch fries. Soak in cold water for 20–30 minutes to remove excess starch, then drain and pat very dry with paper towels.

    Season fries

    Toss the dried fries (or frozen fries straight from package if using) with 2 tablespoons oil, coarse salt, black pepper, and smoked paprika until evenly coated.

    Cook fries

    Option A - Oven (recommended for easier prep): Preheat oven to 425°F (220°C). Spread fries in a single layer on a parchment-lined baking sheet (use two sheets if crowded). Roast for 20–30 minutes, flipping halfway, until golden and crisp. Option B - Frying: Heat 1½–2 inches of oil in a heavy pot to 350°F (175°C). Fry in batches 3–5 minutes until golden and crisp. Drain on paper towels and season immediately with a pinch more salt.

    Cook bacon

    While fries are cooking, cook bacon until crisp in a skillet over medium heat or bake on a sheet at 400°F (200°C) for 15–20 minutes. Transfer to paper towels to drain, then chop into bite-size pieces.

    Prep jalapeños and scallions

    Thinly slice jalapeños (remove seeds for less heat) and slice green onions on the diagonal. Chop cilantro if using.

    Assemble with cheese and bacon

    When fries are hot and on the baking sheet or platter, evenly scatter about half the shredded cheddar-jack over the fries, then sprinkle the chopped bacon and sliced jalapeños on top. Finish with the remaining cheese. If you want the cheese melted quickly, place the loaded fries under the broiler for 1–2 minutes (watch closely) or put the baking sheet back in a 425°F oven for 2–4 minutes until cheese is melted and bubbling.

    Finish garnishes

    Remove from oven, sprinkle sliced green onions and chopped cilantro over the top. Add a few extra jalapeño slices for presentation if desired.

Housemade Ranch Dressing

    Whisk together mayonnaise, sour cream, and buttermilk until smooth. Add lemon juice, minced garlic, dried dill, dried parsley, dried chives, salt, and black pepper. Taste and adjust seasoning or thin with a little more buttermilk if you prefer a looser dressing. Refrigerate at least 15 minutes to let flavors meld. Stir again before serving.

Assembly & Serve

    Transfer the cheesy bacon fries to a serving platter or keep on the baking sheet. Serve immediately with a side bowl of housemade ranch dressing, lime wedges, and hot sauce on the side for those who want extra heat. Recommend serving with forks or small tongs for easy sharing.
