Method

Pickled Onions

    Place thinly sliced red onion in a heatproof jar or bowl.

    In a small saucepan, combine apple cider vinegar, water, sugar, and 0.5 tsp salt. Bring to a simmer until sugar dissolves, about 1–2 minutes.

    Pour the hot pickling liquid over the onions, press down so they’re submerged, cool to room temperature (15–20 minutes), then refrigerate at least 30 minutes. Use straight from jar; reserve 3 tablespoons for assembly.

Roasted Tomatoes

    Preheat oven to 425°F (220°C). Toss 1 cup cherry tomatoes with 1 tsp olive oil and a pinch of salt and pepper on a baking sheet.

    Roast until softened and slightly blistered, about 12–15 minutes. Remove and let cool to room temperature.

Bacon

    Cook bacon in a skillet over medium heat until crisp, about 6–8 minutes, turning as needed. Drain on paper towels and chop into bite-sized pieces.

Crispy Chicken

    If using a whole chicken breast, slice it into two thinner cutlets (about 1/2" thick) for even cooking.

    Marinate chicken in 1/2 cup buttermilk with a pinch (about 1/8 tsp) of salt and pepper for 15–20 minutes to tenderize.

    In a shallow bowl, mix flour, panko, paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 3/4 tsp salt, and 1/2 tsp black pepper.

    Remove chicken from buttermilk, letting excess drip off, then dredge thoroughly in the flour-panko mixture, pressing to adhere.

    Heat 3 tablespoons vegetable oil in a large skillet over medium-high heat. When oil shimmers, add chicken and cook 3–4 minutes per side until golden brown and an internal temperature of 165°F (74°C). For thicker pieces, cover and reduce heat to medium and cook additional 2–3 minutes per side as needed.

    Transfer cooked chicken to a wire rack or paper towels and rest 5 minutes, then slice into strips for the salad.

House Ranch

    In a bowl, whisk together mayonnaise, sour cream, and 1/4 cup buttermilk until smooth.

    Stir in chopped chives, parsley, dried dill, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp salt, 1/8 tsp black pepper, and 1/2 tsp lemon juice. Adjust thickness with a little more buttermilk if needed. Chill until ready to serve.

Hot Honey

    In a small saucepan over low heat, combine 1/4 cup honey and 1/2 tsp red pepper flakes. Warm gently until honey is runny and infused, about 2–3 minutes. Remove from heat and stir in 1/2 tsp lemon juice if using. Strain if you prefer a smooth drizzle. Cool slightly; reserve about 2 tablespoons for the salad.

Salad Assembly

    Tear or chop romaine into bite-sized pieces and place in a large bowl or plate (6 cups).

    Slice half an English cucumber into half-moons (about 1/2 cucumber) and scatter over romaine.

    Add roasted cherry tomatoes (1 cup) and chopped crispy bacon (from bacon section).

    Top with sliced crispy chicken strips and spoon 3 tablespoons pickled onions over the top.

    Sprinkle 1/4 cup shaved Parmesan evenly over the salad.

    Drizzle about 2 tablespoons hot honey over the chicken and salad for a sweet-heat finish.

    Serve house ranch on the side for dipping or drizzling. Portion for 1–2 people and enjoy immediately so the chicken stays crisp.
