In a large bowl, combine the chicken strips with buttermilk. Cover and refrigerate for at least 2 hours or overnight for best results.

In a separate bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge each strip in the flour mixture, ensuring they are fully coated. Shake off any excess flour.

Fry the Chicken
In a deep pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the chicken strips in batches, frying until golden brown and cooked through (about 5-7 minutes per batch).

Remove the fried chicken strips and drain on paper towels. Serve hot with your choice of dipping sauce and chips.
