    Prepare the Vegetables

    Peel and chop the russet potatoes, onion, carrots, and celery. Mince the garlic.

    Sauté the Aromatics

    In a large pot, melt the butter over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute.

    Cook the Potatoes

    Add the chopped russet potatoes to the pot along with the chicken or vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.

    Blend the Soup

    Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.

    Add Cream and Season

    Stir in the heavy cream, salt, and black pepper. Heat through for about 5 minutes.

    Serve

    Ladle the soup into bowls and garnish with chopped fresh chives before serving.
