    Prepare the Ingredients

    In a large bowl, combine the lamb, salt, and black pepper. Set aside.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, and celery. Sauté until softened, about 5-7 minutes.

    Brown the Lamb

    Add the seasoned lamb to the pot and brown on all sides, about 5-10 minutes.

    Add Vegetables and Broth

    Stir in the carrots, potatoes, thyme, and rosemary. Pour in the broth and bring to a boil.

    Simmer the Stew

    Reduce heat to low, cover, and let it simmer for about 1.5 to 2 hours, or until the lamb is tender and the vegetables are cooked through.
