Dry the Potatoes
After soaking, drain the potato slices and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the right temperature for frying.

Fry the Crisps
Working in batches, carefully add the dried potato slices to the hot oil. Fry them until golden brown and crispy, about 3-5 minutes. Make sure not to overcrowd the pot.

Drain and Season
Using a slotted spoon, remove the fried crisps from the oil and drain on paper towels. While still hot, sprinkle sea salt, black pepper, and paprika to taste.

Transfer the Irish crisps to a serving basket and enjoy warm as a snack or appetizer.
