Pretzel Dough

Method

Making Pretzels

  1. 1

    Prepare the Dough

In a large bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5 minutes until frothy. Add flour and salt, mixing until the dough comes together. Knead for about 5 minutes until smooth. Cover and let it rise in a warm place for 1 hour.

  2. 2

    Shape the Pretzels

Preheat the oven to 450°F (232°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope and twist into a pretzel shape.

  3. 3

    Prepare the Baking Soda Bath

In a large pot, bring about 10 cups of water to a boil and add baking soda. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

  4. 4

    Bake the Pretzels

Brush each pretzel with the beaten egg and sprinkle with coarse sea salt. Bake for 12-15 minutes or until golden brown. Remove from the oven and let cool slightly.
