Cook the Asparagus
Trim the ends of the asparagus. In a skillet over medium heat, add 1 tablespoon of butter. Once melted, add the asparagus and sauté for about 5-7 minutes until tender. Season with salt and pepper. Remove from skillet and set aside.
- 3
Sear the Salmon
In the same skillet, add another tablespoon of butter over medium-high heat. Season the salmon filets with salt and pepper. Place them skin-side down in the skillet and sear for about 4-5 minutes. Carefully flip the salmon and cook for another 3-4 minutes until cooked through.
- 4
Make the Herb Glaze
In a small bowl, mix the remaining butter, lemon juice, and chopped fresh herbs. Once the salmon is cooked, pour the herb glaze over the salmon in the skillet and let it simmer for an additional minute.
- 5
Assemble the Dish
On each plate, serve a portion of the pearl couscous topped with sautéed spinach, the seared salmon, and asparagus on the side. Drizzle any remaining herb glaze over the top.
