    Prepare the Onions

    Slice the Guinness onions and sauté them in a skillet over medium heat with a tablespoon of butter until caramelized, about 10-15 minutes.

    Prepare the Tomatoes

    Slice the Roma tomatoes thinly and set aside.

    Assemble the Sandwich

    On two slices of sourdough bread, layer the Monterey Jack cheese, goat cheese, cheddar cheese, sautéed Guinness onions, and sliced Roma tomatoes. Top with the remaining two slices of bread.

    Grill the Sandwich

    Spread butter on the outside of each slice of bread. Heat a skillet over medium heat and grill the sandwiches for 3-4 minutes on each side or until the bread is golden brown and the cheese is melted.

    Serve

    Remove from heat, slice in half, and serve warm.
