Prepare the Potato Gratin
Preheat your oven to 375°F (190°C). Slice the potatoes thinly and layer them in a baking dish. In a saucepan, cook the bacon until crispy, remove and crumble it. In the same pan, add heavy cream and bring to a simmer. Stir in grated cheese until melted. Pour the mixture over the potatoes, sprinkle crumbled bacon on top, and bake for 45-50 minutes until golden and bubbly.

Cook the Lentils
Rinse the lentils and place them in a saucepan with 3 cups of water. Add salt and spices to taste. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and set aside.

Grill the Pork Chops
Season the pork chops with salt, pepper, and any preferred spices. Preheat a grill or grill pan over medium-high heat. Grill the chops for about 4-5 minutes on each side or until they reach an internal temperature of 145°F (63°C). Let them rest for a few minutes before serving.

Make the Spiced Fruit Reduction
In a saucepan, combine chopped fruit, sugar, and apple cider vinegar. Cook over medium heat until the fruit softens and the mixture thickens, about 10-15 minutes. Blend if a smoother texture is desired.

Plate the grilled pork chops alongside the French green lentils and potato gratin. Drizzle the spiced fruit reduction over the pork chops for a flavorful finish.
