    Prepare the Mashed Potatoes

    Peel and cube the Yukon Gold potatoes. Boil them in salted water until tender, about 15-20 minutes. Drain and return to the pot.

    Mash the Potatoes

    Add butter and heavy cream to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Cook the Vegetables

    Blanch the green beans and carrots in boiling water for about 3-4 minutes until tender-crisp. Drain and set aside.

    Grill the Filet Mignon

    Preheat the grill to high heat. Season the filet mignon with salt and pepper. Grill for about 4-5 minutes on each side for medium-rare, or to desired doneness.

    Make the Sherry Veal Jus

    In a saucepan, combine sherry and veal stock. Bring to a simmer and reduce by half, about 10 minutes. Season with salt and pepper.

    Plating

    On a plate, place a serving of Yukon mashed potatoes, top with the grilled filet mignon, and arrange the green beans and carrots on the side. Drizzle the sherry veal jus over the steak and serve.
