Prepare and Grill the Pork Chops
Rub the pork chops with olive oil, salt, pepper, garlic powder, and fresh thyme. Preheat your grill to medium-high heat. Grill the chops for about 5-7 minutes on each side or until they reach an internal temperature of 145°F. Let them rest for a few minutes before serving.

Prepare the Gratin
Preheat your oven to 375°F. In a baking dish, layer half of the sliced potatoes. Sprinkle half of the chopped bacon and half of the grated Gruyere cheese. Repeat the layers. In a bowl, mix the heavy cream, minced garlic, salt, pepper, and thyme. Pour the mixture over the layered potatoes. Cover with foil and bake for 40 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.

Make the Fruit Reduction
In a saucepan, combine diced mixed fruits, brown sugar, cinnamon, nutmeg, and apple cider vinegar. Cook over medium heat for about 15-20 minutes, stirring occasionally, until the fruits break down and the mixture thickens.
