Torte Ingredients

Method

Torte Directions

  1. 1

    Prepare the Oven

Preheat your oven to 180°C (350°F) and grease a 9-inch round springform pan with butter.

  2. 2

    Melt the Chocolate

In a heatproof bowl, combine the dark chocolate and butter. Melt over a double boiler or in the microwave, stirring until smooth.

  3. 3

    Mix the Batter

In a large mixing bowl, whisk together the sugar and eggs until pale and fluffy. Gradually fold in the melted chocolate mixture, then add the ground almonds and amaretto liqueur until well combined.

  4. 4

    Bake the Torte

Pour the batter into the prepared springform pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until the edges are set but the center is still slightly soft.

  5. 5

    Cool and Remove

Allow the torte to cool in the pan for 10 minutes before carefully removing the sides of the springform pan. Let it cool completely on a wire rack.

  6. 6

    Prepare the Ganache

For the chocolate ganache, heat 100 ml of heavy cream until it just begins to simmer. Pour over 150 g of chopped dark chocolate and let sit for 5 minutes. Stir until smooth and glossy.

  7. 7

    Finish the Torte

Once the torte is cooled, pour the ganache over the top, spreading it evenly. Refrigerate until set.

  8. 8

    Serve

Slice the torte and serve with berry coulis drizzled on the plate for an elegant presentation.
