    Prepare the Mashed Potatoes

    Peel and quarter the Yukon Gold potatoes. Place them in a large pot of salted water and bring to a boil. Cook for 15-20 minutes until tender. Drain and return to the pot.

    Mash the Potatoes

    Add butter and milk to the drained potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.

    Cook the Sausages

    In a skillet, heat olive oil over medium heat. Add the pork sausages and cook until browned and cooked through, about 10-12 minutes, turning occasionally.

    Make the Demi-Glace

    Remove the sausages from the skillet and set aside. In the same skillet, add flour and stir for 1-2 minutes. Gradually whisk in the broth until smooth. Stir in the grain mustard and let simmer for 5 minutes until thickened.

    Serve

    Place a generous scoop of mashed potatoes on each plate, top with sausages, and drizzle with the grain mustard demi-glace. Enjoy your Bangers and Mash!
