    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the Russet potatoes under running water and dry them with a paper towel. Poke several holes in each potato with a fork. Rub olive oil over the potatoes and sprinkle with salt. Place them on a baking sheet and bake for about 45-60 minutes, or until the potatoes are tender.

    Prepare the Bacon

    While the potatoes are baking, cook the smoked bacon in a skillet over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Scoop and Fill

    Once the potatoes are cooked, let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving about 1/4 inch of potato on the skin. Brush the insides with olive oil, and season with salt and pepper. Place them back on the baking sheet.

    Add Cheese and Bacon

    Sprinkle the shredded cheddar, mozzarella, and parmesan cheeses evenly inside each potato skin. Top with the crumbled bacon.

    Bake Again

    Return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove the potato skins from the oven, let them cool slightly, and then serve with a dollop of sour cream and a sprinkle of chopped chives.
