Prepare the Crust
Preheat your oven to 350°F (175°C). In a medium bowl, mix the chocolate cookie crumbs with the melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Bake for 10 minutes, then remove from the oven and let cool.

Make the Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue to beat until well combined. Add the Bailey’s Irish cream and vanilla extract, mixing until smooth. Finally, add the eggs one at a time, beating well after each addition.

Combine and Bake
Pour the cream cheese mixture over the cooled chocolate cookie crust. Smooth the top with a spatula. Bake in the preheated oven for 50-60 minutes, or until the center is set and a slight jiggle remains when gently shaken.

Cool and Serve
Once baked, turn off the oven and crack the door open. Let the cheesecake cool in the oven for about 1 hour. Remove from the oven and refrigerate for at least 4 hours, preferably overnight. When ready to serve, drizzle with chocolate and caramel sauce.
