Method

Cake Preparation

    Preheat the Oven

    Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large mixing bowl, sift together all-purpose flour, cocoa powder, baking powder, baking soda, and salt.

    Cream Butter and Sugar

    In another bowl, cream together the softened butter and granulated sugar until light and fluffy.

    Add Eggs and Wet Ingredients

    Add eggs one at a time to the butter-sugar mixture, beating well after each addition. Mix in buttermilk and vanilla extract.

    Combine Dry and Wet Ingredients

    Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in boiling water until the batter is smooth.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.

    Cool the Cakes

    Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.

Chocolate Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, melt the chopped semi-sweet chocolate over a double boiler or in the microwave. Let it cool slightly.

    Prepare Gelatin

    In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes until it blooms.

    Whip the Cream

    In another bowl, whip the heavy cream with sugar and vanilla extract until stiff peaks form.

    Combine Mousse Ingredients

    Stir the bloomed gelatin into the melted chocolate until fully dissolved. Gently fold in the whipped cream until well combined.

    Chill the Mousse

    Cover the mousse and refrigerate for at least 1 hour to set.

Frosting Preparation

    Beat Cream Cheese and Butter

    In a mixing bowl, beat the softened cream cheese and butter until smooth and creamy.

    Gradually add powdered sugar and vanilla extract, mixing until the frosting is light and fluffy.

Assembly

    Layer the Cake

    Once the cake layers are completely cool, place one layer on a serving plate. Spread a layer of chocolate mousse on top.

    Place the second cake layer on top of the mousse. Spread more chocolate mousse over the top.

    Use the cream cheese frosting to frost the sides and top of the cake. Decorate as desired.
