Preparation
1. Harvest Grapes
Begin by harvesting 100 kg of ripe Merlot grapes. Ensure they are free from rot and other imperfections.
2. Crush Grapes
Crush the harvested grapes to release the juice. This can be done using a wine press or by hand.
3. Add Water
Add 10 liters of water to the crushed grapes to help dissolve the sugars and facilitate fermentation.
4. Prepare Yeast
In a separate container, dissolve 20 g of yeast in a small amount of warm water and let it activate for about 10 minutes.
5. Combine Ingredients
Combine the crushed grapes, water, and the activated yeast in a fermentation vessel.
6. Add Sugar
Stir in 5 kg of sugar to the mixture to increase the alcohol content and enhance the flavor.
7. Add Sulfur Dioxide
Add 2 g of sulfur dioxide to the mixture as a preservative and to prevent unwanted microbial growth.
Fermentation
8. Seal and Ferment
Seal the fermentation vessel with an airlock to allow gases to escape while preventing air from entering. Let it ferment for 1-2 weeks at a controlled temperature of around 20-25°C.
9. Check Fermentation
Check the fermentation process regularly. Once bubbling slows down significantly, fermentation is nearing completion.
Pressing and Bottling
10. Press Wine
After fermentation is complete, use a wine press to separate the liquid wine from the grape solids.
11. Bottle the Wine
Transfer the wine into clean bottles, leaving some space at the top. Seal each bottle securely.
