    In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well. Dredge the calamari rings in the flour mixture until evenly coated. Shake off any excess flour.

    Heat the Oil

    In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 180°C (350°F). You can test the oil by dropping in a small piece of the batter; it should sizzle and rise to the surface.

Frying the Calamari

    Fry the Calamari

    Carefully add the coated calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy. Use a slotted spoon to remove the calamari and transfer to a paper towel-lined plate to drain excess oil.

Preparing the Topping

    In a large bowl, combine the arugula, capers, and marinated tomatoes. Drizzle with lemon oil and toss gently to coat.

Serving

    On a serving platter, arrange the fried calamari. Top with the arugula mixture. Serve immediately with lemon wedges on the side for squeezing over the calamari.
