Steak Preparation

Remove the bistro steaks from the refrigerator and let them come to room temperature for about 30 minutes.

Preheat your grill or grill pan to high heat.

Rub the steaks with olive oil and season both sides generously with salt and black pepper.

Place the steaks on the hot grill and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness is reached.

Once cooked, remove from the grill and let the steaks rest for 5 minutes before slicing.
Red Wine Demi Preparation

In a saucepan over medium heat, melt 1 tablespoon of butter and add the minced shallots. Cook until they are translucent, about 2 minutes.

Allow the wine to reduce by half, then add the beef stock and thyme.

Continue to simmer until the sauce thickens slightly, about 10-15 minutes.

Remove from heat and whisk in the remaining tablespoon of butter until melted and combined. Season with salt and pepper to taste.
Parmesan Truffle Fries Preparation

Preheat your oven to 425°F (220°C).

Wash and peel the russet potatoes, then cut them into thin strips (about 1/4 inch thick).

Place the potato strips in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

Drain and pat the potatoes dry with paper towels. Toss them in a large bowl with truffle oil, salt, and pepper until evenly coated.

Spread the fries out in a single layer on a baking sheet lined with parchment paper.

Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden brown and crispy.
