Prepare the Mango Salsa

Make the Cabbage Slaw

Mix Slaw Ingredients
In a separate bowl, combine the shredded cabbage, shredded carrot, apple cider vinegar, olive oil, salt, and pepper. Toss until everything is evenly coated. Set aside.
Prepare the Fried Shrimp

In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, salt, and ground black pepper.

Batter the Shrimp
Dip the shrimp into the batter, ensuring they are well coated.

Heat Oil
In a large skillet, heat oil over medium-high heat. Make sure there is enough oil to submerge the shrimp.

Fry Shrimp
Once the oil is hot, carefully add the battered shrimp in batches. Fry until golden brown and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Make Coconut Cream

In a bowl, mix the coconut cream with honey (or maple syrup) until smooth and creamy.

Warm the taco shells or tortillas. Fill each shell with fried shrimp, sprinkle with shredded cheddar, add a generous spoonful of mango salsa, a scoop of cabbage slaw, and drizzle with coconut cream.
