Preparation
- 1
Prep Ingredients
Start by peeling and deveining the Gulf shrimp if not already done. Drain and rinse the cannellini beans, and halve the cherry tomatoes. Mince the garlic and chop the fresh parsley.
- 2
Heat Oil
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering.
Cooking
- 3
Sauté Shrimp
Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes. Cook for 2-3 minutes, or until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.
- 4
Cook Garlic and Tomatoes
In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the halved cherry tomatoes and cook for another 2-3 minutes until they start to soften.
- 5
Add Wine and Beans
Pour in the dry white wine and stir to combine. Bring the mixture to a simmer, then add the cannellini beans. Cook for about 5 minutes, allowing the flavors to meld.
- 6
Combine and Finish
Return the cooked shrimp to the skillet and toss everything together. Cook for an additional 2-3 minutes until everything is heated through. Adjust seasoning with additional salt and pepper if needed.
- 7
Garnish and Serve
Remove from heat, sprinkle with fresh parsley, and serve immediately, preferably with crusty bread or over pasta.
