Flatbread Preparation
1. Make the Dough
In a mixing bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy. Add olive oil, salt, and flour gradually while mixing until a dough forms.
2. Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp cloth, and let rise for 1 hour in a warm place.
3. Roll Out the Dough
Once the dough has risen, punch it down, divide it into smaller portions, and roll each portion into a flat circle about 1/4 inch thick.

4. Prepare the Shortribs
Season the short ribs with salt and pepper. In a large pot, heat a bit of oil over medium-high heat and sear the short ribs on all sides until browned.
5. Cook the Short Ribs
Add the chopped onion and minced garlic to the pot and sauté for 2-3 minutes. Pour in the beef broth, cover, and simmer on low heat for about 2 hours until tender.
6. Shred the Meat
Once the short ribs are cooked, remove them from the pot, let cool slightly, and shred the meat, discarding any excess fat.

In a small bowl, combine sour cream, chopped chives, and sriracha sauce. Mix well and set aside.
Assembly
8. Assemble the Flatbread
On each flatbread, layer shredded short ribs, a generous sprinkle of cheddar cheese, and top with the chive sour cream mixture. Fold or roll the flatbread as desired.
9. Serve
Serve the shortrib flatbreads warm, garnished with additional chives if desired.
