In a large bowl, mix together soy sauce, olive oil, minced garlic, black pepper, brown sugar, red wine vinegar, and fresh thyme until well combined.

Add the steak tips to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.
