Drain the dill pickle slices and pat them dry with paper towels to remove excess moisture.

Heat the Oil
In a large skillet or deep fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Pickles
Carefully add the coated pickle slices to the hot oil in batches, frying them for about 2-3 minutes or until golden brown. Use a slotted spoon to transfer them to a paper towel-lined plate to drain excess oil.

Serve the fried pickle chips hot with the spicy aioli on the side.
Spicy Aioli

Combine Ingredients
In a small bowl, mix together mayonnaise, sriracha sauce, lemon juice, and minced garlic until well blended.

Add salt to taste, adjusting the spice level with extra sriracha if desired.

Transfer the spicy aioli to a serving bowl and serve alongside the fried pickle chips.
