Preheat the Oven
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Mix Dry Ingredients
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

Combine Mixtures
Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the grated carrots and crushed walnuts gently.

Pour Batter into Pans
Divide the batter evenly between the prepared cake pans.

Bake the Cakes
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes
Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.

Prepare the Frosting
In a large mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

Add Sugar and Vanilla
Gradually add the powdered sugar, mixing until well combined. Add the vanilla extract and mix until smooth.

Frost the Cake
Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top. Place the second layer on top and frost the top and sides of the cake.

Optional: Sprinkle additional crushed walnuts on top of the frosted cake for decoration.
