Caramelizing the Onions
In a large skillet, heat the butter and olive oil over medium heat. Add the sweet onions and cook, stirring occasionally, for about 15-20 minutes until they are soft and golden brown.

Mixing the Dip
In a mixing bowl, combine the caramelized onions and garlic with the chopped Brie, softened cream cheese, sour cream, chopped thyme, salt, and black pepper. Mix until well incorporated.

Baking the Dip
Transfer the mixture to a baking dish and bake in a preheated oven at 350°F (175°C) for 20-25 minutes until bubbly and golden on top.

Frying the Chips
In a large, deep pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add potato slices in batches, frying for 2-3 minutes until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.
