Prepare the Meatloaf Mixture
In a large mixing bowl, combine the ground beef, chopped short ribs, finely chopped onion, minced garlic, bread crumbs, egg, Worcestershire sauce, salt, black pepper, barbecue sauce, and bourbon. Mix until well combined.

Shape and Bake
Preheat your oven to 350°F (175°C). Transfer the meat mixture into a loaf pan and shape it into a loaf. Spread additional barbecue sauce on top for glazing. Bake in the preheated oven for 60-70 minutes or until the internal temperature reaches 160°F (70°C).

Soak the Onions
Place the thinly sliced onions in a bowl and cover them with buttermilk. Let them soak for at least 30 minutes to soften.

Prepare the Coating
In a separate bowl, mix the flour, cornstarch, salt, and black pepper. Mix well to create a uniform coating.

Fry the Onions
Heat oil in a deep skillet over medium-high heat. Remove the onions from the buttermilk, allowing excess to drip off, then coat them in the flour mixture. Fry in batches until golden brown and crispy, about 3-4 minutes. Remove from oil and drain on paper towels.

Mash the Potatoes
Once cooled, peel the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until creamy and smooth.

Spread the seasoned vegetables on a baking sheet in a single layer. Roast in the preheated oven for about 25-30 minutes or until tender and slightly caramelized.
