    Slice the Eggplant

    Wash the eggplant and slice it into thin fries, about 1/4 inch thick. Place the slices in a colander, sprinkle with salt, and let them sit for 30 minutes to draw out moisture.

Breading

    Prepare the Breading Stations

    In three separate bowls, set up your breading stations: one with all-purpose flour, the second with beaten eggs, and the third with a mixture of breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.

    Coat the Eggplant Fries

    Rinse the salted eggplant slices under cold water and pat them dry with paper towels. Dip each slice first in the flour, shaking off the excess, then in the beaten eggs, and finally coat them in the breadcrumb mixture.

Frying

    Heat the Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Carefully add a few eggplant fries to the hot oil, being sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove them from the oil and place them on a paper towel-lined plate to drain excess oil.
