    Prepare the Dressing

    In a small bowl, whisk together the ginger, garlic, soy sauce, lime juice, olive oil, and honey until well combined. Set aside.

    Prepare the Garnishes

    Dice the mango and avocado. Chop the cilantro. Set aside.

Cooking the Tuna

    Sear the Tuna

    Heat a skillet over high heat. Season the yellowfin tuna with salt and pepper. Add a small amount of oil to the skillet, then sear the tuna for about 1-2 minutes on each side for rare, depending on thickness. Remove from heat and let rest for a minute.

Plating

    Assemble the Dish

    Slice the seared tuna into thin slices. On a plate, arrange the crispy wontons, top with sliced tuna, diced mango, avocado, and sprinkle with peanuts and cilantro. Drizzle with the cilantro ginger dressing before serving.
