    Prepare the Rice

    Cook the brown rice according to package instructions. Once cooked, set it aside to cool.

    Sauté the Mushrooms

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushrooms and garlic, and sauté until the mushrooms are soft and all the moisture has evaporated, about 5-7 minutes. Remove from heat and let cool.

    Mix the Burger Ingredients

    In a large bowl, combine the cooked brown rice, sautéed mushrooms, chopped almonds, remaining olive oil, salt, black pepper, and egg (or flax egg). Mix well until all ingredients are combined. If the mixture is too wet, add breadcrumbs until you reach a suitable consistency.

    Form the Patties

    Divide the mixture into equal portions and shape each portion into a patty.

    Cook the Patties

    Heat a non-stick skillet over medium heat. Add a little olive oil, and cook the patties for about 4-5 minutes on each side, or until golden brown.

    Prepare the Miso Dressing

    In a small bowl, mix together 2 tablespoons of miso paste with 1 tablespoon of water and a splash of olive oil to create a dressing.

    Assemble the Burger

    Serve the veggie patties on a bun or lettuce wrap, topped with fresh arugula and drizzled with miso dressing.
