    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to make fries.

    Soak the Fries

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain the soaked fries and pat them dry with a towel. Fry them in batches for about 4-5 minutes or until they are golden brown and crispy.

    Add Flavor

    Remove the fries from the oil and let them drain on paper towels. While they are still hot, drizzle with truffle oil, and sprinkle with grated Parmesan cheese, salt, and pepper.

    Mix Ingredients

    In a bowl, combine mayonnaise, grainy mustard, lemon juice, minced garlic, salt, and pepper.

    Whisk Together

    Whisk all ingredients together until smooth and well combined.

    Chill

    Refrigerate the aioli for at least 15 minutes before serving to allow the flavors to meld.
